The “Shinshu Salmon” is a salmon, characterized by its beautiful salmon-pink meat.
The fish is an all-female sterile triploid, crossbred between female rainbow trout and male brown trout. It was developed by the Nagano Prefectural Fisheries Experimental Station by 2004.

Though cultured in the freshwater (not marine) fish farms of mountainous Nagano, it grows over 60 cm in length and 3kg in weight by the age of three.
Having a rich but delicate flavor with moderate fat and high protein contents, the Shinshu Salmon is suitable for sashimi and smoked fish.
